One of our goals in the near future is to start introducing new menu items for both our taco cart catering and gourmet food truck divisions. And, part of that vision is to maintain a balance between our straight forward classico tacos with our especiales, but still tantalize the senses and keep our customers wanting more!
So, recently we got together to try out some tacos that might pop up on our specialty menu and the ones we came up with are the images you see here.
What you’re looking at are about three different tacos; one is with chicken, another shrimp and a final one with mixture of shrimp & scallop. All of which were served with a tangy mojo salsa, a common citrus based condiment found in the Carribean, various cheeses and then served on a freshly made tortilla.
How were they? In a word: divine.
Nevertheless, many questions were raised about how to prepare them consistently, whether they should be a regular or special item and, of course, how much would we charge?
For now these beauties remain in the test kitchen. But, who knows? Hopefully one day they’ll make their debut.
