1. The Edge of the Tortilla is All Sorts Of Wonky & Jagged

Simply looking at a photo (like the one on the left) you can instantly tell it’s handmade and not from a bag if the edges tend to be a bit jagged and wonky.  When the masa goes on the press, it spreads out in any old way it wants.  If it’s perfectly circular, then it was most likely made by a machine.

2.  The Masa Is Made From Scratch, Not Store Bought

The next time you order a taco served on a handmade tortilla, ask where they got the masa.  Hands down (pun fully intended) the best type is made from scratch.  At SoHo Taco, we use our own secret recipe that cannot be found on any store shelf nor pre-made at your local Latin grocery store.

3.  The Tortilla Was Made About 10 to 15 Minutes Ago

One of the heartbreaking things we experience on the truck is when someone asks for their tacos to go.  We understand that folks are in a hurry and can’t stick around too long.  But, handmade tortillas have a “window of greatness” which is about 10 to 15 minutes.  After that time frame, the tortillas go from “great” to “pretty good”.  So, the best time to have a taco is the moment you have it in your hand.

4.  You Have A Skilled Tortilla Maker Grilling Up the Tortillas

Both on our gourmet food truck and on our taco catering carts, our super-skilled tortilla makers only have one task: make the tortillas.  Unless things get super, duper busy they rarely do any of the taco assembly, calling of names or working the register.  Making a tortilla by hand requires constant supervision from beginning to end, it’s pretty intense.

5.  The Tortillas Are Made By SoHo Taco

Sorry for the obvious product placement, but it’s true!  Our standards are such that if the tortillas are too dry, they aren’t cooperating on the grill, they don’t taste the way they should, then we simply won’t serve them.  It is through our rigorous training and utmost care that we can ensure the very best tortilla goes out every time.  Fortunately, the girls we have on staff are so good at adapting to various surroundings and climates, they know how to bring out the very best tortillas in almost any challenging situation.

In a perfect world, every taco you have will be served on a tortilla hecha a mano.  If you’ve never had one before, prepare yourself for an exceptional treat and one of the best tacos experiences by far.  And, if you’re a veteran, then hopefully our tips will help make sure the next one you have will be the very best.

Gourmet food truck catering for an intimate Newport Beach
birthday party last Saturday in one of the most beautiful
neighborhoods in Orange County

Few people know that, in addition to our charming little taco catering carts, our gourmet food truck can be hired for private events as well.  And, last Saturday was one of several luxurious affairs that we have lined up for our lovely iron lady.

Over the weekend we had the honor and the privilege of making a special birthday celebrant’s Newport Beach party even more delicious by parking our gourmet food truck in front of her residence.  Check out our pix!

Almost immediately after we launched our food truck division, we were absolutely blessed with countless inquiries to hire it out for private events.  Although many folks simply adore our taco catering carts, there is clearly a privileged few who prefer the “wow factor” of having our critically-acclaimed mobile kitchen serve as the center piece for the event.

On this particular evening, we served many of the same gourmet tacos we would have available on a regular food truck stop, with the addition of lemon & Spanish rice as well as our exquisite batch of creamy refried beans.

And, from the feedback we received the event was an utter success!  Everyone had an outstanding time and we were simply honored to help make it even more delectable.

Last month we had the privilege of taco catering for the engagement party of the lucky couple, Mary Joy & Kelly, who won our complimentary services on the Premier Bridal Show‘s “Over The Top Wedding Sweepstakes.”

For us, we had an utterly spectacular time and we even detailed it on a blog posting shortly thereafter.

Since then the Mary Joy was so impressed by our services, that she logged in TWO five-star Yelp reviews! Because this was actually the second time we had the honor of serving her (the first time was during a work-related luncheon), she wrote about her experience at both occasions!

This evening at 5:30P we have the immense pleasure of returning to the wildly popular Truck Squad stop at the Best Buy of Fullerton.

And, what better way to make the springtime air even more delicious than by introducing some special items for North Orange County?!

One of them is our guisado (or “braised”) taco called barbacoa de res.  We take beef, simmer it for several hours in our special tomato-based salsa until it’s tender and fall-of-the-bone juicy.  It’s not only super flavorful, but wonderfully satisfying!

We’re also bringing out one of our personal favorite condiments, chile de aceite.  This spicy salsa made of roasted chile de arbol has a bit of a kick, but just the right amount to give any taco an exquisite smokey dimension.
