We just broke a company record and we had a fantastic time doing it!

Yesterday, SoHo Taco had the immense honor of being selected by Corinthian Colleges to help provide gourmet taco catering for their hardworking employees.  In order to feed 875+ people within two hours, we brought seven of our best taco carts, employed a crew of about 20 strong and then grilled up enough mouth-watering meals to satisfy a small army.

Although we’ve had more customers at other functions (we just served about 1200 people at Tacolandia last Sunday!), this is the first time we brought out so many carts and so many of our team members at one time.  It truly was epic.

As part of an overall fiesta theme, we brought three types of tacos for everyone: veggie, carne asada and chicken.  Guests also had the option to accompany their meals with our freshly-made tortilla chips, beans and rice.  And, we can’t forget the array of tantalizing salsas!

Temperatures soared close to 100F during lunch, but we definitely didn’t have time to think about the heat.  Each crew member was too busy giving it their all and concentrating on customer satisfaction.  Worry about the heatwave?  Ain’t nobody got time for that!!

Soon, 1PM rolled around and all our guests had to return to work.  So, we packed up everything and headed straight back to headquarters contemplating how truly privileged we were to  have been chosen for that luncheon.
