Our spicy potato tacos are a certain crowd pleaser for vegans and omnivores alike. With it’s blend of diced creamy potatoes and grilled vegetables it was an absolute delight at last Saturday’s wedding at La Cañada Thursday Club.
Made with farm fresh produce and our special blend of herbs and spices, this meat-free wonder still delivers the flavors and satisfaction of its animal based counterparts. But, before we continue here’s a quick potato fact:
Now to make our version of this vegetarian classic we start out by peeling and dicing the potatoes back in the kitchen. We usually get large batches of this vegetable so this is pretty labor intensive. Another component of this dish are the mixed veggies which consist of bell peppers, onions, herbs and spices. These too get diced up, but they arrive separately from the potatoes and there’s a reason for that: different cooking times. Because the potatoes had to be grilled on site last Saturday, we knew they would take a bit longer to cook before they’re nice and creamy on the inside but still holding up a firm structure on the outside. So, we made sure they would be the ones to hit the grill first. After a good 15 to 20 minutes on the flat top, the potatoes are scooped up and placed into a large container as it waits for the next step. From there we clear off the grill and throw on the diced veggie mixture in the second bag. This one usually cooks a lot faster, about 5 to 10 minutes, and you know it’s ready when they develop a nice char and a sweet caramelized flavor. ![]() Once complete both the grilled potatoes and the veggie mixture gets tossed together as one. The marriage between the two flavor components is tremendous. On Saturday, we served this delicacy on a fresh, hand-pressed tortilla. So, if you can imagine biting into a Taco de Patata Picante you know you’re going to get the wide, satisfying base note flavors from the potatoes complemented by the rich high note flavors from the grilled veggies. ![]() The combination of all these fine ingredients alone are absolutely fantastic. But, when you top it off with our condiments like chopped onions and cilantro and add a dash of our fresh made Salsa de Jalapeño the experience is utterly divine. Many of us here at SOHO TACO are not vegan nor vegetarian, but this our Potato Taco is easily ranked up there as one of our favorites. Once in a great while we serve this delicacy on our food truck, but you would mostly find this at our private catered events. And, last Saturday many of the wedding guests had the pleasure of enjoying this delicious item on their plates. Hope to serve one to you soon!
