Thanks for the wonderful feedback, Brooke! Hearing from past customers is a great way to assess areas that need improvement and strengthen the parts where we excel.
In her review, Brooke mentioned that her guests really enjoyed the Salsa de Guacamole so much that they gobbled it up quickly. And, it’s no wonder. This condiment is easily one of our most popular items on the menu and it’s absolutely delightful.
Before we get into how we make this exquisite complement to our tacos let’s go over some guacamole facts!
To make our version of this ancient classic we start out with avocados at their peak of ripeness. Now, in case you didn’t know fresh avocados do not ripen on the tree. In fact, they ripen or “soften” after they have been harvested which can be anywhere from 2 to 3 days, depending on many factors including climate, breed and handling. Although the fruit’s skin color can help in the visual selection of the fresh avocados it is not always the best way to determine ripeness.
Usually, the best way to know if it’s ripe is to quickly touch for softness. And, the trick is to time it correctly so when it’s time to make the salsa, the fruit is at its peak.
So, once our chefs determine they’re good and ready, we peel large batches in our kitchen and mash up the flesh in a large bowl. From there we add our vine ripened tomatoes, spicy red onions and our special blend of herbs and spices.
The result is a luxuriously creamy salsa that goes terrific with almost any of our extensive line of tacos, especially bold flavored items like our savory carne asada or our rich al pastor. Or, you can even just scoop up a dollop on a tortilla chip and enjoy it as is. So good!
