We’re still in the early part of December, so it’s not too late to introduce this month’s taco of the month. Meet our next instant classic El Taco de Ahi Quemado ($4.95 each).
This seafood lover’s delight features seared ahi tuna, spicy cabbage and a caramelized onion aioli, all of which is served on a fresh made crispy tortilla dorada. It’s light and refreshing yet packed with so much flavor, we hope you enjoy it!
To make this month’s special we receive carefully filleted ocean fresh ahi tuna delivered straight to our kitchen. This high quality protein is not only super tender, but it’s also sushi grade so you know you’re in for an exceptional treat.
Our skilled kitchen team then takes the fish and seasons it with our special blend of traditional herbs and spices. This will not only give it a sweet enjoyable crust, but also lightly marinades it just a little bit for added flavors.
From there, we do a quick sear on each side on the stove, no more than 15 seconds. Just enough time to give a rich golden color on the outside while leaving a deep rose color on the inside.
Ahi Tuna is one of those types of seafood you do not want to cook all the way through. If you have ever tried it, the resulting texture tends to be super dry even if you leave it medium rare. Also, you lose much of the rich, natural flavors of the protein. So, it’s always better to just do a quick sear on the outside and nothing more.
Next we wrap of the seared protein and send it off with the food truck crew in a chilled container to keep it super fresh.
Flash forward to the food truck stop, the moment you place the order with the on site team our talented cooks take out the seared tuna and slice it into bite sized pieces.
We then tuck a generous amount of spicy cabbage into a fresh made tortilla dorada, which will serve as the foundation. From there we carefully lay the morsels of seafood on top until all of the cabbage is covered.
For the finishing touch, we top off the combination with a wonderful caramelized onion aioli and a pinch of peppery micro greens.
Together the flavors are simply outstanding. The deep flavors of the proteins are deftly balanced with the high notes of the toppings. And, the added crunch of the fresh made tortilla shell adds a welcome texture to help round out the culinary experience.
This will be the first time we will be serving a cold taco from the truck, which is perfect for those blistery hot winters here in Southern California. 😉 Also, this makes it ideal for those looking for something light and flavorful to help them through the post-lunch afternoon stretch.
