Happy Hump Day! Today we discuss a little bit about el taco de #AhiQuemado ($4.95 each) and what makes this December special, well, special. And, we also cover another wonderful 5☆ review that we received the other day on Facebook. It’s been a great week and we hope yours has been just as tremendous.

Let’s start out with our tantalizing taco of the month. Last night the food truck was at Cismontane Brewing Company in Santa Ana for another Taco Tuesday with the locals, where we had the opportunity to serve up the exquisite #AhiQuemado.

Now, if you’re a seafood lover you should absolutely give our latest creation a bite. Its main feature are generous portions of tender and luxurious morsels of seared ahi tuna.

Cesar carefully slicing up morsels of search ahi tuna last night on the food truck stop at Cismontane Brewing Company.

We start out by asking our fishmonger for top notch, sushi grade ahi tuna filets. When we receive the delivery in our kitchen, the protein is then inspected carefully. We look for moist (but not wet or weepy), shiny, almost translucent meat. This means the fish is fresh and recently prepared.

Another way we test for freshness is simply by taking a quick sniff. The fish should have a fresh sea-air smell and not an overly fishy odor.

If the seafood passes our test, then the kitchen prepares it for service. This is done by first seasoning the exterior and then searing each side for about 10 seconds or so. Then, it’s wrapped up at sent out with the food truck crew.

Last night at Cismontane, our food truck chef Cesar took the prepared fish and sliced a few morsels on site very carefully and with the sharpest knife available. Whenever you cut into a something this refined you should always start with razor sharp cutlery.

The finished product as served last night at Cismontane Brewing Company. So good!

From there the portions were carefully placed onto the bed of spicy cabbage and served in a crisp, fresh-made tortilla shell.

The result of all this hard work is a fish taco that you can actually enjoy for the inherently wonderful seafood flavors. That is, it has no breading to get in the way. It’s not drowning in sauce. It’s a pure fish lovers delight that truly celebrates the wonders of the natural flavors itself.
