|Today is Saturday and in general this is the busiest day of the week for us here at SOHO TACO. And, add to that the plethora of holiday celebrations, birthdays and company appreciation parties all happening today and you’ve got another hectic day here at headquarters….we’re looking forward to it!
One of the items on the menu for several of our events today is our delectable Rebanada de Uvas Appetizers. This wonderful, meat-free treat is a fiesta of flavors and textures that’s perfect anytime of year.

To make this starter we begin with fresh baked baguettes that we slice into oval shapes or, as they would be called in Spanish, “rebanadas”. Butter is added to one side and they’re toasted on the stove until they’re crisp and golden brown.
We gather up the rebanadas which are then shipped to their events quickly so they don’t lose their texture.
On site at the event, just before the tacos are served, our skilled chefs prepare the treat by first layering a smooth serving of cool cream cheese which serves as the base. When you have a few prominent high notes it’s good to balance things out with something neutral flavored such as this wonderful dairy product.
From there we had the main component which are the sliced juicy grape halves. This simple yet flavorful fruit give is not only the featured namesake of this appetizer, but it also provides the sweetness in this symphony of flavors.
Another beautifully flavorful ingredient are our house-made chili lime peanuts, which are carefully made in batches in the kitchen. These wonderful little legumes are sauteed with chili, limes and our secret blend of herbs and spices to provide a mouth-watering dimension of crunchiness and tanginess to the appetizers.
Finally, to finish off this treat, the entire ensemble is crowned with peppery micro greens to not only add a bit more flavor but to also provide the contrast in colors needed for visual appeal. And, since we eat with our eyes, aesthetics plays an important part.
Once the appetizers are complete, they’re served immediately and usually no later than one hour after assembly. If they sit around too long the bread starts to get a bit soggy so the crew makes it a point to churn these out as soon as possible and to serve them up without delay.
The result is one of our surprisingly delightful appetizers that pleases vegetarians and meat lovers alike. The flavors are astoundingly balanced and the textures supply the needed mouthfeel that signals satisfaction.
