The key to a great pollo asado taco is to start out with a blazing hot grill. You know the temperature is just right when the protein touches the metal and lets out an aromatic sizzle, a sure sign that great flavors are on their way.
In this photo we have the batch of pollo asado that was grilling during our new employee orientation last Wednesday. During this lesson it was emphasized how important it was to start off with a very hot grill to give the meat a chance to caramelize and lock in juicy flavors.
Of course one should always start out with quality meat, but without a white hot grill you miss out on many flavor components and hopefully everyone at orientation takes this lesson to heart.
