|It’s a Saturday that’s a bit on the wet side today here in Southern California, so hopefully you’re staying dry out there. For us, that certainly doesn’t mean the festivities have come to a halt. In fact, it’s definitely full speed ahead!
One of the delectable items that every special occasion today has on their menu is a classic side dish that might not be the star of the show but still plays a valuable part, our always satisfying Spanish rice.
The images you see on today’s blog posting were taken at last weekend’s wedding at Dos Pueblos Orchid Farm where we grilled up some of our best tacos, but of course we wanted to offer a well rounded meal. And, that’s where this side dish comes in.
We start out with top quality basmati rice and boil them in water infused with vine ripened tomatoes, herbs and spices. Then, once they reach the perfect fluffy consistency we take it off the flame and add season it to taste. That’s when the kitchen crew wraps it up and hands it over to the on site crew for serving.
Sure, it might not be as sexy as our savory carne asada or as wildly famous as our exquisite veggie tacos, but our Spanish rice definitely plays an important role in balancing out flavors as well as providing a shot of vibrant colors on the plate.
So, we just finished up a huge batch of this accompaniment here in our kitchen and now we’re divvying it among our various events today. Hopefully we’ll get the chance to serve up a huge scoop of our Spanish rice for you today.
