On the culinary side, we usually only serve this side dish at private catering events and we start out by making preparing it on the day of the event. In order to maximize flavor and texture, you really can’t make this the day before. So, it’s important the kitchen fires up the stove not long before guests enjoy it.
In fact, for far away events like the ones up in San Luis Obispo or further, we actually make it on site. Not only would they probably not be as tasty if we prepared it the day before, but it’s not likely to travel well after a few hours. So, we always make it at the venue.
