If you’re reading this that means you survived last night’s #BEYchella slaying. It may be a gorgeous Sunday here today in Southern California, but for many in the Coachella Valley they’re still in a glitter filled hangover from the amazing music festival taking place at the Empire Polo Club. Wake up!

Speaking of festivities, we do have several Coachella related events to cater out in the general area, including a few in Palm Springs. And, we can’t wait!

One of the events have on their menu all of our fantastic classic taco, but they also wisely chose to tack on an array of appetizers, including out exquisite Albóndigas.

This morning our kitchen crew is working harder than Beyonce’s hair in a wind tunnel. We’re rolling up little delectable meats into balls, stuffing them with figs and throwing them into the oven for a quick bake.

Afterwards, we plan on letting them simmer in our special tomato based salsa, that’s been seasoned to perfection. Our crew plans on transporting them out to the Palm Springs area in a few minutes and they’re good and ready for the trip out there.

Once our team arrives at the event, all they have to do is set out the trays and scoop the meatballs onto the container with a little salsa. Then, they stab a pick through the center similar to what Beyonce must have felt in her heart when she learned of Jay Z’s infidelity. Except, this one has a much happier ending.

This really is one of our most popular appetizers and there’s no surprise there. It’s absolutely flavor packed and satisfying. And, like a terrific noontime act at Coachella, it’s a GREAT way to get the festivities started.

Hang in there Palm Springs, we’re almost there. The van is loaded with all our goodies and our crew is eager to hop on the 91 freeway towards the desert. We’ll be there in a bit with all of our delicious tacos and more Albóndigas than there baton twirlers and stompers at #BEYchella last night. See you soon!
