Exquisite Esquites for your esaturday. Rich yet light and satisfying, we had the pleasure of serving up these one bite appetizers at last Thursday’s tasting night and they were a hit!

In case you missed it, our monthly Tasting Night took place a couple of days ago at our corporate headquarters and this time we had about 35 people show up. That’s a pretty good size, nothing to crazy but definitely cozy enough for our team to give a personal touch.

On hand was a vast menu of all you can eat tacos, chips, salsas, aguas frescas and, of course, appetizers. On this evening we served about 15 different types of appetizers! Crazy, huh? Well, it’s always good to have choices!

We served amazing starters such as Tostaditas de Ceviche, Espadillas de Fruta, Sopesitos de Mole de Pollo and the one pictured here our wonderful esquites.

If you’re not too familiar with this traditional dish, Esquites (or ezquites) (or troles and trolelotes in Northeast Mexico) also known as vasito de elotes (little corn-cup) is a Mexican snack or antojito. Shops and market stalls selling corn also tend to sell esquites. The word esquites comes from the Nahuatl word ízquitl, which means “toasted corn”. (Source: Wikipedia)

Our version is made with farm fresh corn that’s been grilled just enough to give it that flavorful scorch across the top. Then, we mix it up with our special salsa of mayonaise, salt, lime, herbs and spices. Then we sprinkle a little bit of tajin on top for color and then garnish it with a little micro green.

To help with give it a more elegant presentation the mixture is then served in a bite sized scoop that’s shaped very similar to women’s high heel shoes …. well, except without the heel part.

The combination of the ingredients and it’s fancy carrying case is this beautiful appetizers that rich, smokey and flavorful on the palate with a sophisticated appearance for the eyes.

The batch that we served up last Thursday night was completely gobbled up, so hopefully that means everyone enjoyed them!
