As beautiful and oasis like as The Millwick can be, it does have its unique set of challenges for us when we cater at this historic venue. Nothing crazy, but it’s definitely something to consider whenever we grill at this re-purposed industrial building.

The main thing is the grilling and where it should take place. Often when we’re there the newlyweds and/or their event planner would ask that we have the food ready to be served moments after the vows are exchanged and the tricky thing is, well, the ceremony is literally taking place where the taco cart should be.

No problem!

We’ve been to this venue countless times and each time we’re there what we do is do some prep work and grilling out in the parking lot while the officiant is blessing the holy union. That way, the sound of the grilling and noise of our equipment is at its minimum without causing any interruptions.

Then, when we get the signal from the coordinator the courtyard area is cleared out and our crew is given the signal to transfer everything over from the parking lot to the designated taco cart area of the courtyard. The whole process only takes about 20 to 30 minutes transition time and we’ve done this so often it usually goes off without a hitch.

And, that’s the moment you see in the lead photo on today’s blog, where you see the shrimp grilling in the foreground with the Millwick’s courtyard framing the background.

So, as tranquil as that image may seem lots of work went into making sure it happened perfectly.

Today, we have the pleasure of firing up the grill again, but no need to be moving taco carts or waiting for vows to be exchanged: DINNER 5PM to 8:30PM, Cismontane Brewing Co, 1409 E Warner Ave Ste. C, Santa Ana, CA.

And, as with every week we’re at Cismontane it’s Happy Hour between 5PM and 6PM, so all regular menu item tacos are only $1 each, including our succulent Tacos de Camarones.
