It’s August and it’s a new month. Surprise! Yeah, believe it or not July just slipped away and now we’re at the beginnings of a new one. How time flies, doesn’t it?
Well, it’s also a very good thing because we’re thrilled to present to you our special for the month of August, El Tallado ($5.74 each).
This month’s hand-held delicacy features ocean fresh New Zealand sea bass coated with a chile adobo spice rub, sweet heirloom tomato pico de gallo and cabbage slaw and finally creamy guacamole.
What makes this month’s special remarkable is that the fish is prepared en papillote, which is a French cooking term for steaming the ingredient in paper or foil. In this case we wrap up the fresh seafood, some herbs and spices in foil and then we throw it on the grill to heat it up.
After a few minutes the sea bass is flakey tender and infused with wonderful flavors. It might be a french technique, but the flavors are unmistakably Mexican.
The flavor combination of the seafood with the farm fresh produce, all served on a fresh hand-pressed tortilla is truly a wondrous symphony on your palate. It’s definitely sure to tantalize and delight seafood lovers … and their friends. 😉
