Happy Monday, everyone! Hope your weekend has been as exhilarating as ours. SPECTACULAR SEPTEMBERIt’s back-to-school season, but that doesn’t mean the partying has stopped. Apparently, we’ve been blessed with the busiest September in our company history and we couldn’t be more thrilled! Many thanks to everyone out there who entrusted their special occasion to SOHO TACO. We are absolutely grateful and look forward to serving you many times again soon. In the meantime, another fantastic success these past few days is our monthly special, Lechón Pibil ($4.95 each). Have you tried it out yet? It’s been so popular lately that it keeps selling out at our food truck stops! RELATED: Click here for our calendar of upcoming food truck stops & events MIXIOTE STYLE PREPARATIONOne of the unique aspects of this taco is that it’s prepared mixiote style, which is a traditional pit-barbecued meat dish which comes from central Mexico; especially in the Basin of Mexico. As it turns out, we don’t have a barbecue pit hand but this dish can also be prepared in an oven. It is usually made with mutton or rabbit, but chicken, lamb, and pork are also used. And, for our #LechonPibil use high grade pork for this wonderful dish. We take the pork add our special blend of traditional herbs and spices, like smokey chiles, garlic and salsas. Then, we wrap it up in banana leaves for added cooking flavors, finally it’s surrounded by aluminum foil to seal in all the goodness. The package is then thrown on the grill and they look like giant Hershey’s Kisses! From there they braise in their own flavorful juices for some time until the pork comes out juicy, fall off the bone tender. Once it’s ready, we take a good sized serving of the pork and place it on the fresh, hand-pressed tortilla. Remember, all tacos on our food truck comes served with a fresh tortilla, so this is another welcome addition for this dish. Next add a ribbon of house-made salsa consisting of mango, habanero chiles and more. This yellow salsa brings a wonderful breadth of flavor and we make it daily in our kitchen. Finally, the taco is topped off with a scoop of pickled onions, which are also made in house. These little strips of goodness adds a terrific high notes of flavors and they help balance out the meatiness of the pork. All together these components make up one of our tastiest pork tacos ever. It has a complex meatiness that’s unmistakably pork, but with smokey tender flavors from old Mexico. Just like all of our monthly specials, this one is an exclusive on our food truck and we will be proudly serving it throughout the rest of this month. Be sure to check our calendar for our next stop.
