Over the weekend we had the pleasure of catering for a beautiful reception at the picturesque Fullerton Arboretum and we had a terrific time. In today’s blog we talk about the venue as well as the sights, sounds & aromas of this mouth-watering occasion. RELATED: Click here for our calendar of upcoming food truck stops & events Setting Up In The ArboretumBlessed with another gorgeous day in Southern California, our crew arrived at the venue and had to set up quickly. We had about 200 palates to tantalize to so we had to act fast. So, for this occasion we were asked to bring two carts and an extra crew to accommodate the demand, which we set up under the awning of the main building without any issues. To help bring to life much of the sights and sounds of this special occasion, check out our little video: Located on the Northern side of Cal State Fullerton, it was pretty easy finding this venue. We have served here before in the past and it’s always a pleasure grilling here. Once everything was set up, we got started on grilling the main courses of savory carne asada and succulent al pastor. We also had a small order of juicy, garlicky shrimp tacos for the wedding party as well. Grilling Was Such A PleasureAs our crew grilled away preparing for the upcoming feast, guest were in the courtyard area hanging out, playing games, taking photos, etc. It was awesome whenever a plume of smoke would emit from the carts, they would look our way with hungry eyes almost ready to pounce! They were probably starving and we couldn’t wait to serve them either. Farm Fresh Condiments & SalsaThen, once most of the taco ingredients were prepared, the crew started work on the condiments and salsa table. On hand we had smokey roasted red tomato salsa, fiery salsa verde made with pure jalapenos and farm fresh cilantro & onions. Similar to the duplicate carts, we also had two sets of tables for the condiments and salsas. It was essentially a mirror set up of everything on one side and the other. This was super helpful in allowing guests to take their time crafting their meals and allowing others to move at their own pace. So, while someone was working on the scooping on a good amount of cheese onto their tacos, another guest was able to load up on the beans & rice with ease. It was like a well-oiled machine. Dinner Service Went Smoothly & Everyone Had A Great TimeOnce the sun set it was dinner time. First came the wedding party dressed wonderfully and elegantly. They were accompanied by the wedding planner who helped assemble a special plate for the bride & groom as they were running around taking pictures at the time. Guests of all ages approached our team, from adults to toddlers. The great thing about the evening’s menu was the ability to please all tastes. We were even able to make simple quesadillas for the kids and veggie tacos with the refried beans side dish. There was definitely something for everyone. It was great seeing everyone enjoy themselves as we grilled up a storm. From grad parents to co-workers it was great to cook and prepare a wonderful meal for the bride and groom’s loved ones. Afterwards, the DJ started letting the rest of the guests approach the carts table-by-table. Fortunately everything went smoothly and quickly. As everyone started to line up our guys worked very hard to make sure everyone was served and with a smile. At over 200+ guests, vendors and venue staff, this was a good sized celebration and our crew managed to serve everyone within the first hour. Several even had the chance to come back for second servings…. and thirds! To help make things move much faster, we kindly asked guests to limit their selections in the beginning to about 3 or 4 tacos, but they were always welcome to come back in line for more servings. This was no problem especially since there were other delectable side dishes to accompany their meals, like fluffy lemon rice and creamy refried beans. Not to mention the always popular fresh made tortilla chips. RECAP: Congrats & Thanks For Having Us!Overall it was a wonderful experience we won’t soon forget. The guests were super friendly and accommodating and the venue was absolutely stunning.
