On a dark desert highway, with cool wind in your hair and warm smell of colitas rising up through the air, up ahead in the distance you might see a shimmering light. If your head grows heavy and your sight grows dim, at Hicksville Trailer Palace you should spend the night.
Every year we have the pleasure of catering for several dozen wedding receptions, special events and family gatherings throughout the greater Southern California area. But, now and then we’ll fire up the grill at a venue that is so remarkable that we won’t soon forget it. And, Hicksville Trailer Palace in beautiful Joshua Tree CA is just that place.
Built by Los Angeles writer and director Morgan Higby Night, Hicksville was opened in April 2010 as a retreat for artists of any medium to get away and have a safe place to create & collaborate.
The motel came into existence as Morgan realized that people from any occupation or background might appreciate a place to go relax and enjoy the magic that is in and around Joshua Tree. And, he was definitely right about that. In fact, it’s also a perfect retreat to tie the knot!
Earlier this month we had the great pleasure of being selected by the bride and groom to cater the wedding celebration at this desert venue and we had a great time!
We were surrounded by unique, custom trailers, guarded by joshua trees standing tall and an expansive view of the stunning high desert. It was an amazing place to call our office for the day!
The ceremony itself was off site, but the celebration took place on the premises. And, to make the special event even more enjoyable the family and friends rented all the ten available trailers.
As the couple was tying the night with friends & family in tow elsewhere, our guys were back at the property preparing a terrific selection of appetizers, tacos and side dishes for everyone to nosh on.
When the bus returned from the ceremony site, guests poured out into the compound and waiting for them were several trays of appetizers.
For example on hand we had Tostaditas de Ceviche made of ocean fresh red snapper cured in fresh lime juices, herbs and spices. We also prepared a couple dozen of our Tostaditas de Chorizos, which featured grilled, traditional Mexican sausage on creamy salsa de guacamole.
For our vegetarian and vegan guests we were proud to serve up Cucharadas de Esquites, which were little spoons of traditional Mexican corn kernals served with cheese or without cheese depending on the request.
And, our final appetizer was our Espadillas de Frutas, which featured juicy watermelon and ripe mango cubes on a little spear topped with traditional salsa de chamoy. This one is always a favorite at events and it’s event better during the summer months.
All of these wonderful one or two bite treats were prepared by hand and timed perfectly so when that first bite hits the hand-held delight was at it’s optimal best.
Next up our crew helped prepare the condiments and side dishes to help accompany the upcoming feast. So we found a beautiful table next to the festivities, draped a linen over it and started to assemble some of our very best.
For this magical evening we had the pleasure of offering some of our best salsas like our mango salsa, guacamole, spicy salsa verde and smoky salsa roja.
Alongside these delectable salsas were a plethora of farm fresh toppings to help guests customize their own edible masterpiece. Like bright green cilantro, tangy diced onions and lemony limes.
Once the appetizers were goggled up, our crew got to work on the mouth-watering selection of tacos for the evening. On the menu was our classic carne asada made with Certified Angus Beef®, juicy pollo asado, vibrant veggie tacos and succulent shrimp tacos.
It was definitely a feast worthy of a unique and super romantic wedding and we greatly appreciate the honor to have served everyone.
Now keep in mind you must have a reservation to visit the property and getting there does involve traversing some dirt roads, but once you’re there it’s truly an oasis of quirkiness and creativity. We’re pretty sure you’ll enjoy it as much as we did.
