| One of the highlights of this month’s special Camarones Fuego (pictured here) is the quick squeeze of the bright green housemade avocado aioli that gives this popular item its wonderful finishing touch. The vibrant colors of this salsa not only harmonizes with the predominant orange colors, but it also gives it a nice cool tone to help balance out the spicy tangy flavors.
If you haven’t had a chance to check it out yet, it really is one of our best yet. In fact, at our stop yesterday in Costa Mesa at Vans HQ, we completely sold out of it! For those who love juicy, succulent shrimp and spicy old world flavors, this truly is one item you have to bite into.  Now, as you can see a lot of thought and consideration goes into our monthly specials which seem to be resonating terrifically with everyone. We absolutely enjoy creating them and we love the looks of enjoyment guests gets at that first bite. So, every month we look forward to dazzling taste buds with something exciting and new. It really does validate all the hard work we’ve been doing and it inspires us to keep the creative juices flowing. And, speaking of creative juices, we just finished the R&D for next month’s special, finalized the recipe and it’s just about ready for your enjoyment. For the month of December we decided to reach back into the ocean and give you a taco that’s unlike any other that we have served so far. We call it “Aji Quemado”, which is a seared ahi tuna on a crisp, fresh made tortilla shell.  We’ll have more details & photos soon, but In case you haven’t guessed this will be the first time we will be serving a cold taco and we can’t wait for you to try it!  We just took the photos and videos of it yesterday and we plan on revealing more about this chill taco in the next few weeks. And, then we plan on serving it up at all our food truck stops in next month. So, stay tuned.
