A Scenic Voyage to Taco Triumph

The Californian sun dipped below the horizon, casting long shadows across the twisting roads leading to La Cañada Flintridge, aptly nicknamed “Tree City, USA.” My partner, Armando, and I navigated the scenic route, leaving behind the bustling streets of Santa Ana for a charming haven nestled amidst towering oaks and vibrant foliage. Our destination? A magnificent house, soon to be the stage for a three-hour epicurean adventure – taco catering for a 40-person birthday bash.

Unloading the Culinary Arsenal

Soho Taco, our culinary chariot, rumbled to a halt on the driveway. Excitement crackled in the air, a vibrant mix of anticipation and the promise of deliciousness. We unloaded our arsenal of culinary delights: glistening carne asada, marinated to melt-in-your-mouth perfection; al pastor, the king of tacos, boasting its signature smoky sweetness; spicy potato, a vegetarian option bursting with bold flavors; and succulent shrimp, a coastal twist on the classic. Spanish rice and refried beans, the quintessential taco accompaniments, awaited, ready to round out the plethora of taste.

The carne asada taco is grilled to perfection on the grill, being moved every couple seconds to fully cook. The al pastor is a longer and different process, we spread it on the hot grill covering it all up, then after about 5 minutes we flip it to the other side. Its then moved around the grill to finish cooking, the result is tender savory al pastor. For the spicy potato the veggies like red bell peppers, yellow bell peppers, onion, and jalapeño are grilled till they are caramelized. Once caramelized the potato comes in and gets mixed on the grill, then seasoned to perfection. For the shrimp, it is grilled with a garlic butter and is the quickest to make.

The shrimp taco has melted pepper jack cheese, cabbage, and chipotle sour cream on a corn tortilla. My recommendation for topping the shrimp would be adding mango salsa and maybe a hint of lime. The guests loved my recommendation, some even came back just to get the shrimp again so they can top it off with mango salsa. If you are not a fan of mango salsa guacamole works great too plus anything is good with guacamole.

The Refreshing Maestro. Watermelon Agua Fresca

But tacos are mere notes in this culinary concerto. The true maestro? Our handcrafted watermelon agua fresca. This vibrant elixir, infused with the essence of summer, offered a refreshing counterpoint to the savory fiesta. Each vibrant pink glass was a testament to the art of pairing beverage with food, a subtle symphony for the palate.

A Collaborative Performance. The Taco Bar

As guests arrived, the air buzzed with the joyous energy of a celebration. We set up our taco bar, a vibrant display of culinary artistry. The aroma of sizzling carne asada, the enticing char of al pastor, and the vibrant colors of the toppings – fresh cilantro, pico de gallo, mango salsa, guacamole and a variety of salsas – created an irresistible sensory experience.

The art of taco catering transcends mere food service. It’s about fostering an atmosphere of shared enjoyment, where the act of assembling your own taco becomes a collaborative performance. Guests, transformed into temporary culinary maestros, assembled their masterpieces with meticulous care, each bite a unique expression of their personal preferences.

Throughout the evening, we witnessed countless expressions of pure satisfaction. Laughter filled the air, punctuated by the rhythmic clinking of taco shells. Conversations flowed freely, fueled by the shared experience of enjoying delicious food in a convivial setting. The birthday girl, beaming with joy, expressed her sincere appreciation for the culinary journey we had orchestrated. She mentioned that they were looking for taco catering last minute and found us online with great reviews, even though we were more expensive she decided to try us out. She did not regret it one bit because not only do we arrive with good quality food but also provide a friendly atmosphere.

As the final guests departed, a sense of accomplishment washed over us. We had transformed a house into a haven of culinary delight, leaving behind a trail of satisfied smiles and happy memories. The drive back to Santa Ana was filled with a quiet contentment, the lingering taste of success a sweet reward for our efforts.
