Happy TGIF… you made it! How was your work week? Hope everything went well. And, we’re about to head into a nice three day Memorial Day Weekend. Many of your we’re sure have some exciting plans up ahead and our calendar is no exception.

We have several special events coming up throughout Southern California, including an epic wedding rehearsal up in San Luis Obispo. We’re definitely looking forward to that one since we not only get to bring some of our best cuisine up to the Central Coast, but a handful of us get to stay overnight in the beautiful town.

For that particular occasion we’re grilling up some of our best tacos on fresh, hand-pressed tortillas but we also get to showcase some of our finest appetizers, like our rich and savory Albóndigas.

Today’s lead photo was taken at another wedding last Saturday at the San Diego Botanic Garden and isn’t it gorgeous? It actually came out pretty nicely, all the colors and textures of the salsa de chipotle are pronounced and, if you squint a bit, you can see some of the steam emitting meatball itself.

Usually served just before the big meal, this ultra popular hand-held delight features hand-rolled meatballs stuffed with figs, herbs and spices. Then the spheres are roasted in the oven to get a nice little scorch then they’re tossed into a mixture of our housemade salsa de chiptole for that added flavor dimension.

When they’re transported to the event site they’re swimming in the same chipotle salsa to not only help keep them warm but to also help give the flavors even more of a chance to permeate throughout the ingredients.

Once they’re ready to be served, our chef scoop a sphere onto one of those plastic serving trays that you see in the photo above. It’s then followed up with a scoop of the salsa for that added flavor and dipping opportunity, of course! Finally, we stick a fashionable bamboo stick into it and it’s ready to be served.

If you haven’t had it yet, it’s as exquisite as it is satisfying. So much umami is found in each bite making the aperitivo not only delicious but extremely satisfying.
