BEHIND THE SCENES: Making Our Signature Tostadita De Ceviche Appetizers

Easily one of our most popular appetizers, our Red Snapper Ceviche is so simple to make yet extremely flavorful.

Today is the 15th of June and we are literally at the halfway point for the year, crazy huh? Hopefully 2018 has been good to you so far and may the rest of the year be just as fantastic.

Now that we’re diving ride into summer it’s time for those bites that fit perfectly with the season and few delicacies embody this time of year than our signature ceviche.

Recently we spent some time with our Executive Chef Javier Zambrano to find out more about this signature dish, how to make it and where he got the inspiration. Check it out:

To make this mind-bogglingly simple dish we start out with ocean fresh red snapper and the best the market has to offer. It arrives in our kitchen whole, so our skilled cooks have to break it down, filet it and chop it into cubes.

Then it’s time to marinade it. We take the juice of both a lime and lemon and mix it together to come up with a perfect blend of acid and sweetness that you only get when you combine the two.

From there we squeeze the juice on top of the seafood cubes and then we add just enough salt for flavor. We let the mixture rest for about 10 to 15 minutes, which not only helps the flavors penetrate the fish but the acids also cook it to the point where it firms up and has the perfect texture.

Using a combination of fresh squeezed lemon and limes to help not only “cook” the seafood but also impart a taste of sunshine.

While the fish in marinating in the citrus and salt, we start working on the cutting up the veggies.

We take vine ripened tomatoes, farm fresh chile serranos and tangy red onions and dice them up to about the same size as the fish.

Adding a generous amount of salt to the citrus juice marinade helps bring out its wonderful flavors.

Once we’re done with the veggies, the fish should be nice and ready for the next step.

From there we combine both the veggie mixture with the marinated fish into one bowl until it’s evenly distributed. And, that’s it!

For our appetizers we usually serve it on one of our fresh made tostaditas, which are the ones you see in the lead photo of today’s blog. But, now and then at SOHO TACO HQ we just enjoy it with a simple tortilla chip or by itself on a fork!
