Enjoy Fresh Hand-Pressed Seaweed Infused Tortillas Today In Costa Mesa

One of the highlights of our October special, Taco de Monkfish Asado, is the rich flavors of the Tortillas de Algas Marinas (or “seaweed tortillas”).

It’s one of the unique traits of this wonderful seafood taco and we think it would be fun to let you know a bit more about the process of making them.

Each morning in the kitchen before we serve this month’s delicacy, we take dried seaweed and grind it until it has the consistency of powder. Doing it that way helps to incorporate it easier into the masa. Which brings us to the next step.

From here, we take a batch of fresh made masa and sprinkle in some of the newly ground ingredients into the dough. Of course we don’t just dump the whole thing in there, we slowly knead it in until it has just the right amount of consistency and flavors.

We tried measuring it when we did this the first time around, but it really wasn’t easy to do. From experience we work in about 3 or 4 generous tablespoons, maybe? But even then it depends on the consistency of the masa. So, who knows?

Now, keep in mind that the masa doesn’t turn completely green like the plant after the powdered seaweed is worked in, but you can still see the little specks indicating that they’re definitely there.

Afterwards we continue to cook the tortilla as usual. That is, we press it to the right thickness and then toss it onto the grill. Once it inflates like a pufferfish, we knows it’s ready and take it off to cool a bit.

We usually make about a dozen at a time and stack them up like pancakes until they’re ready for assembly.

Once an order is placed, we reheat the green’ish tortillas with just a few seconds on the grill. Our expert cook piles on the fresh-grilled monkfish and toppings and then sends it on its way to our hungry guest.

Serving #MonkfishAsado with seaweed tortillas is more than just a gimmick. We think it actually enhances the overall flavor experience and complements the other ingredients that it helps to carry.

Also, we think this type of tortilla is super unique and unlike anything you ever experienced. A quick search on Google shows that it’s actually pretty hard to find and we might be the only ones serving it.
