Tonight in Newport Beach not only will we be serving some of our finest tacos, but all of these hand-held delights will be proudly presented on a fresh, hand-pressed tortilla.
This evening from 4PM to 8PM at The Island Hotel (690 Newport Center Dr, Newport Beach CA) we are honored to be dazzling palates once again for all the lovely brides and handsome grooms to be at Wedding Store 24’s bridal show. As we mentioned yesterday, this will be our third time grilling for the wonderful attendees of this special occasion and similar to the ones we participated in the past we will be featuring fluffy, piping hot tortillas hand-pressed to order. Making fresh tortillas is a wonderful addition to any of our catering packages and we can’t wait to showcase this service at Orange County’s premier luxury hotel. RELATED: Click here for our calendar of upcoming food truck stops & events This morning our kitchen brought out a fresh batch of masa, the dough used to make this ancient classic, and we kneaded it enough to make sure it has the right amount of consistency and texture that we’re looking for. Later today we plan on bringing the mixture to the hotel where we will be starting up the magic. First and foremost we fire up the comal or “grill” until it’s super blazing hot. The temperature of the has to be just right. It can’t be too cold or the masa will stick to the grill, but it can’t be too hot or it will burn the outside. Fortunately, after doing this many years, our on site experts have learned to adjust the temperature quickly and easily. Now, the masa comes in kinda of like a giant blob, similar to a huge Play-Doh mountain. So, it still needs a little work before it gets grilled. So, we pinch out little bolas or “balls” of masa with the circumference of about a dollar coin from end-to-end. Then, we take the little spheres and place it into a tortilla press where we apply enough pressure to give it the thickness of a dinner plate, if not thinner. From there we carefully hand lay the flimsy disk across the grill and wait until it browns up on one side and then we flip it over. Often the tortilla will inflate like a pillow and that means it was made perfectly. The end result should be a fluffy tortilla that slightly charred and firm on the outside, but still soft and moist on the inside. That’s when it’s ready to be stuffed with our renowned ingredients and served piping hot. We take lots of pride in making our tortillas. In fact, all tacos served on our food truck is always served on a fresh, hand-pressed tortilla. So, if you happen to come across our mobile kitchen be sure to check it out and bite into one soon.
