And, today we have the great pleasure of serving this deletable treat and much more at our food truck stop in Costa Mesa. Thanks, Kenia! We’re absolutely delighted that you enjoyed your carnitas tacos among the other wonderful items on your plate that day. We certainly look forward to serving you again soon. To make our carnitas we start out with high-quality, farm fresh pork that we hand pick and trim in the kitchen. Then, we toss them in a traditional large, wide-mouthed “cazo”, which looks something like this: Similar to a very large metallic casserole, this vessel holds the protein for a long braise over the stove that lasts between 6 to 7 hours, depending on the amount of carnitas we need to make. Once completed, it’s actually completely and fully cooked. So, we set it aside and let it cool off a bit before we ship them out to the event. At our private taco cart catering and public food truck events, we have the carnitas on hand ready to be ordered by our hungry guests. Once the order is placed, we throw a morsel on the grill for just a few moments. Since they’re already fully cooked, we just need to reheat it a bit before they can be served. Similar to our carne asada and our pollo asado tacos, our carnitas are served without any fixings on it. Essentially, our guests are given just a tortilla and carnitas. It’s like a blank canvas ready to be dressed and customized into a hand-held masterpiece. On our end, we prefer it with just a little cilantro, onions and squeeze of lime. But now and then we like it hot & spicy! And, because it’s so customizable, it’s no wonder why our customers enjoy it as much as we do.
