Handmade tortillas (“tortillas hechas a mano”) not only require a certain skill to make but also come with a simple golden rule when being consumed: eat it quick.

Whenever we provide this delicacy upon request at our taco catering events, we try to make sure that each tortilla is being served in its optimal state.  And, that usually means a short 10 to 15 minute lifespan.

It’s during that rapid precious moment when it’s light and fluffy, yet fully capable of imparting a wonderful nutty flavor for each taco that it envelopes.

Afterwards, if it’s been around too long then it starts to lose most of those magical qualities and make you long for its more spectacular past …. like Charlie Sheen.
