Soft, fluffy and flavorful are probably the three best words that would come to mind when biting into one our tortillas. Of course we can’t ignore the super popular crispy shells, but there’s something absolutely amazing about having it on a fresh, hand-pressed version.

To make it, we start out by sourcing the masa (or the dough) from a reputable, top notch source. When we get it in the kitchen we inspect it for texture and quality. It can’t be too wet and it can’t be too dry, there’s a quality in between and it takes a trained eye to spot it.

At the kitchen, we manually knead the dough (or shall we say we give it a “MASA-age”, ok we’ll stop) to help get that desired texture before sending it out to the event. Then, on site we roll them into balls, press them into disks and then grill them until they’re perfect.

If you’d like to try out our tortillas tonight we have the pleasure of grilling them up again at one of the best breweries in the area: DINNER 5PM to 8:30PM Cismontane Brewing Company, 1409 E Warner Av #SantaAna CA. There all of our tacos are served on a fresh, hand-pressed tortilla and we plenty on hand for everyone.

And, to help make the evening more delicious, all tacos are only a buck each between the hours of 5PM and 6PM. We can’t think of a better deal than that. Sure, there are several restaurants offering $1 tacos but those that serve them on a fresh, hand-pressed tortilla are extremely rare, few & far between.

Since we’re on the topic of the food truck, we’d like to give just a small reminder that we will be kicking off the summer season with our first concert in the park this Friday night in Laguna Niguel:

This Friday 5:30P to approximately 8:30PM at Crown Valley Park (29751 Crown Valley Pkwy, Laguna Niguel, CA) we have the pleasure of serving once more at the Laguna Niguel Summer Concert Series, where once again all of our tacos will come served on a fresh hand-pressed tortilla.

This will be our 6th year participating and we love it every time.

So, hopefully very soon we’ll have the chance to serve you one of our tacos that Alexis was raving about earlier in this blog. And, if not at the food truck stops mentioned here but perhaps at a private catering event. Until then, buen provecho!
