It’s only hump day but we’re sure you’re in the same boat we are, looking forward to the upcoming weekend! We have plenty on our plate, or so to speak. Starting off with another busy Friday, we have celebrations ranging from graduations to weddings.

And, one of the reasons we’ve been thinking even more about this upcoming weekend was because we were just looking back at the images taken at the wedding that we catered just last Saturday in Indio at the Bougainvillea Estate.

If you’re not familiar with the venue, it’s absolutely breathtaking. It’s huge, upscale and ideal for a romantic wedding getaway.

“The Bougainvillea Estate consists of five manicured acres surrounded by a stone wall fence for extra privacy and security. Entrance to this spectacular 9 bedroom (14,000sf) estate is afforded through a large wrought iron gate opening to a breathtaking 400-foot long driveway lined with 24 Brazilian pepper trees that lead past an enormous lawn and one-acre lake, then passing through a second set of wrought iron gates to an inner courtyard with a 16 foot Mediterranean fountain surrounded by the main house, a four car garage and the first guest house. The property features numerous date palms, citrus trees and fan palms. Front lawn can accommodate 150-250 guest weddings and corporate events (additional event fee applies to all events).”

Trust us, this place is GINORMOUS and it even has lake with black swans!

Nonetheless, it was a perfect place for a wedding reception and when we heard that we were selected to cater for this special occasion we were absolutely thrilled.

So, we prepped all mouth-watering appetizers, delectable tacos and farm fresh condiments and salsa and headed towards the deserts of Indio.

For this occasion we served up some of our personal favorite appetizers such as our savory totaditas de chorizo, cocteles de camaron and our sophisticated rebanadas de uvas. Together they were the perfect way to help kick off the festivities.

Then, around sunset that’s when we fired up the grill and prepared some of our finest tacos like our signature carne asada, juicy pollo asado and garlicky mahi mahi fish tacos.

In the end, we finished off the serve on a high note and felt exhilarated. Things couldn’t have gone more smoothly and there were plenty of smiles on the guests faces.

It was truly an honor and a privilege serving everyone. We certainly hope they had as much fun as we did grilling. We had a great time and we look forward to serving everyone again soon.
