How’s your weekend so far? Hope it’s coming along wonderfully like ours. So far it’s been another beautiful stretch of days lately and last night was no exception.

Yesterday evening we had the great pleasure of catering of a romantic evening out on the lush fields of The Empire Polo Club which is located not too far from Palm Springs in the City of Indio.

For this evening we prepared our Premier Package, which is one of our best, so that means we grilled up some rather tantalizing treats.

For this occasion on the menu was some deletable terrestrial offerings such as our pollo asado (“grilled chicken”) and carne asada (“grilled steak”), which was paired with tasty sea fare such as our camarones (“shrimp”) and mahi mahi fish tacos.

All tacos this evening came served on a fresh, piping hot hand-pressed tortilla, which we were making right before everyone’s eyes. They helped provide a terrific base flavor and texture to all the hand-held treats.

Once guests placed their order our friendly cooks whipped up a tortilla and stuffed it with the delightful ingredients of their choice. The fresh plate was then handed over and the guest was free to choose any of our vibrant colored salsas and condiments to help customize their very own masterpiece.

Accompanying what we described so far was our creamy black beans and fluffy lemon rice, which helped rounded out the meal and fill all bellies with satisfaction.
