The Lone Ranger has Tonto, Presidents have Vice Presidents and the Earth has the moon. Great things can be quite awesome on their own, but now & then a good side kick helps brings things up to a whole new level.

That’s why all of our catering packages come with side dishes, like our fluffy lemon rice. Sure, our tacos are great by itself, but add to that a serving of our this yellow hued side dish and you have one well rounded meal.

The images in today’s blog posting were taken at a wedding that we recently catered at the Environmental Nature Center in beautiful Newport Beach CA. For this special occasion, guests were able to pair their carne asada, pollo asado and al pastor tacos with lemon rice and it was a hit!

To make this delectable side dish, our kitchen starts out with top quality basmati rice which we prepare with water infused with natural lemon juice, herbs and spices. Also, in order to assure our SOHO TACO standard of quality we don’t start this process until hours before each scheduled event. So, plenty of advanced planning has to be done before we can whip up a batch.

Moreover, the trick to get the grains to come out fluffy and that takes a bit of practice. You can’t put too much or too little water and the measurements need to be just right. So, our kitchen staff is well versed on how to make this dish carefully.

Once the batch is prepared, we wrap it up in that sticky plastic wrap film and ship it off to the event. When it’s on site and the time is right, the crew whips it out and they put the container in the slot on the taco cart. They give it a quick stir to fluff it up again and it’s ready to serve.

Our lemon rice is light, pillowy and flavorful at the same time. It pairs wonderfully with anything having strong flavors and helps give it that perfect balance.

Currently, this side dish is only available at private catering events and, hopefully one day soon, at public food truck stops.
