You may have had blue corn masa served as tortilla chips or as hard, pre-packaged tortilla shells.  But, U.S. restaurants serving them as fresh, hand-pressed tortillas are very, very few – maybe even non-existent!  And, that’s a shame because they’re absolutely delicious.

The toasted, nutty flavor they impart on the lobster taco definitely rounds out the flavor spectrum.  Sure, the shellfish is wonderfully delectable in and of itself.  But, when served on this hard-to-find dark colored tortilla, it just makes the experience all the more transcendent.

So, call the neighbors and wake the children!  This might be your only chance to try our delicious creation on this traditional tortilla and we’ll be serving it up at our next OC Fair stop.  Hope to see you there!
