In case you haven’t already heard, next Wednesday night (April 24th), during our OC Fair & Event Center stop, we’re planning on grilling up one of the most hard-to-find tacos in this country: lobster on a fresh handmade blue corn tortilla. RELATED: Click here for our official calendar entry for next Wednesday night’s stop We take sweet lobster tail morsels and grill it with our signature garlic butter. Then, we rest it on a bed of jack cheese lovingly melted across a freshly made blue corn tortilla. Afterwards, you can top it off with one of our fresh salsas and condiments. From there, prepare your palate for an absolutely wonderful delight! We still don’t know of any other restaurant or food truck here in the US that serves freshly made blue corn tortillas, let alone one with lobster and that’s such a shame. It really is exquisite! This particular taco was a hit at our test kitchen and we certainly hope you will agree. So, mark your calendars and we’ll see you next week in Costa Mesa!
