Happy Hangover Day… a/k/a “Seis De Mayo”! Did you have a great time yesterday celebrating? Hopefully you had a safe and enjoyable fifth. The weather was absolutely pristine, so it was a great day to enjoy the festivities.

On our end, we truly did have the most epic Cinco de Mayo’s in our history books. It was a completely sold out day, we just weren’t able to do any more drop offs or picks ups let alone any privately catered events. Once again, sorry to everyone who we couldn’t serve this year! Hopefully we’ll get the opportunity next year.

Among the myriad of events that we actually were able to book was this hefty sized 200 person wedding which took place at The Hummingbird Nest Ranch in Simi Valley.

We are definitely no strangers to this venue as we have the privilege on being on one of their preferred vendors list, but this was the largest one we’ve catered on this property.

For this occasion in order to accommodate the hefty 200 person guest list, we had to bring out the big guns. We enlisted three taco carts, six of our finest chefs, 11 bussers, 5 bartenders and two banquet captains. Whew!

It took a lot of coordination and advanced planning, but we pulled it off!

For this occasion the ceremony itself took place in the small forest, the cocktails and appetizers were served out in the pool area then the reception took place in the Lake Lawn area of the property. That’s where we were situated and it’s right next to the Sitting Bull barn section.

This expansive lawn served as the stage for the festivities, dancing, grilling and general good times.

To help get the party started, we served up a terrific selection of appetizers, such as our Tostaditas de Salmon, Ceviche, Cocteles de Camaron and much more. The bussers told us they were gobbled up instantly by the guests, with much of the complements going to the ceviche … and we can’t blame them! Those are indeed quite exquisite.

Meanwhile, up in the reception area we also offered our deluxe chips and salsa bar. Alongside a huge tub of fresh made tortilla chips, we served up spicy salsa de jalapeno, smokey roasted tomato salsa, sweet pico de gallo and creamy guacamole.

The were all served on little china plates and they couldn’t look more elegant. Elegant chips and salsa? Why not?!

On the cart the crew prepped some of our finest tacos such as our carne asada, camarones, mahi mahi and our spicy potato tacos.

And, the great thing about our was that guests were able to mix & match. Would like some spicy potato on your carne asada? No problem! No tortillas at all, just Spanish rice? You got it!

On this evening, the moment night fell guests were dismissed to the taco carts and our crew was ready, willing and able. We did have a slight bit delay in the start of dinner service, but it was no problem. We were able to adapt, roll with the punch and serve up another mouth-watering meal.

We would like to thank all the hard working bartenders, bussers and banquet captains that chipped in last night and helped to make it a success. A guest list of that size is not easy to manage and we wouldn’t have been able to do it without you.

We would also like to thank the newlyweds for selecting SOHO TACO for their special day. We understand you have many choices. So, we are truly honored and humbled for having us serve you and your loved ones.

And, for everyone else out there, thanks for making it this far in the blog post. No seriously, this was a particularly lengthy one and most never even make it this far…. but you did! You are literally 100% pure awesome sauce, we want to just bottle you up and serve you on carne asada.
