It’s a beautiful Monday here at SOHO TACO HQ and just topped off another successful weekend of celebration and good times. And, now we’re gearing up for the Independence Day Celebrations and we have a lot!

Kicking off the festivities is going to be one of the biggest public food trucks events that we do every year in Seal Beach, Band On The Sand. Easily one of the biggest and best July 4th celebrations thrown by an OC city this one almost always ends up on the history books. It seems to get more and more massive every year!

So, if you don’t have any plans on Independence Day Eve, be sure to swing by … but arrive early! Parking can be pretty hectic, so if you can Uber it there even better.

In the meantime, speaking of epic events, we just got back from another overnight trip up to San Luis Obispo last weekend and we had a blast!

Once again we had the pleasure catering another wedding rehearsal dinner at the stunning Greengate Ranch & Vineyards and once again we dazzled taste buds with several tacos served on fresh, hand-pressed tortillas. Check it out:

As is usual, whenever we do long distance events like this we ask our clients to help take care of lodging for the crew and so we had the privilege of staying overnight at a local hotel for this event.

Once we checked in, we went into town and had a quick bite to eat. Then, we headed back to the room to freshen up a bit before starting work at the venue.

For this occasion the menu was pretty huge and once again all tacos were served on fresh hand-pressed tortillas. On hand was our succulent pollo asado, savory carne asada, vibrant veggies tacos and exquisite spicy potato.

As for the side dishes, we had fluffy Spanish rice and creamy black beans, both made fresh…. like literally! Because of the distance from our HQ we had to make both of these dishes on site to assure our quality and standard. So, we fired up the taco cart and made fresh batches right on top and in no time. Both came out wonderfully and we couldn’t have asked for a better one.

Not too far from the taco cart we also had our condiments and salsa table where we had our deluxe package available for all the guests. From sweet pico de gallo, to luxurious guacamole and spicy salsa de jalapeno. We had it all! And, guest happily took advantage of the selection to help make their very own custom made masterpiece.

To help wash it all down, we brought two of our finest aguas frescas. In one huge container we had naturally sweet watermelon and thirst quenching pineapple. Easily some of our very best, these two were gobbled up until the containers were completely empty. Thirsty crowd!

In the end, our crew had a fantastic time. We absolutely LOVE the Central Coast. We’re up there at least 5 to 6 times a year and we enjoy it every time.

We’re absolutely humbled and honored to have been selected by the newlyweds to serve some of our finest fare and we certainly hope everyone enjoyed themselves as much as we did.
