How is your Saturday coming along? Hope you’re enjoying it as much as we are. We have quite a few events today and it’s always a pleasure helping everyone celebrate something special.

And, recently we were fortunate enough to be selected by a wonderful couple to cater for their wedding at the gorgeous Hummingbird Nest Ranch up in Simi Valley.

On the menu for that evening was several of our finest tacos, but we also had to kick off the festivities first. And, to help get the party started we served up a plethora of appetizers including our signature Espadilla de Frutas.

Of course the appetizers didn’t appear out of thin air, we had to assemble them first! While the ceremony was taking place just a few steps away under the shade of towering trees, our crew was quietly tucked away at the pool area furiously assembling hundreds of hand-held treats for the guests. It was a lot of work but we cranked them all out on time!

First we started out by lining the trays with fresh squeezed lime juice along the rims. Then, we dipped each one into a bowl of tajin, a traditional Mexican seasoning typically used on desserts.

Next we lined the bottom of each tray with just a squeeze of salsa de chamoy, another traditional Mexican condiment oftentimes used to delight many a sweet tooth.

Then, we placed skewers of watermelon and mango lovingly assembled for the crew beforehand by our kitchen team. And, we had to act fast, it was almost cocktail hour!

Almost immediately after the vows were exchanged we had a team of bussers carry out the appetizers by the handful to the hungry guests.

The combination of the fruit with the chamoy is this perfectly sweet treat that not only satisfies the palate but also gets the appetite going for the great tacos ahead.

We had an awesome time serving up our signature appetizers and we hope everyone enjoyed them as much as we did serving them.
