Last Saturday, during our stop at Proof Bar & the Santa Ana Art Walk, we had the great pleasure of meeting venerable food blogger and prolific Yelper Elite Minerva Thai … again!

It turns out, sometime towards the end of last year Minerva attended an event where SoHo Taco was catering. She adored her experience so much that she logged in an outstanding write up on her burgeoning food blog Much Ado About Fooding.

Fast forward to last weekend, this gastronomic scribe heard we would be out and about in Orange County so she gathered a handful of her buddies in front of our truck. She tried to duplicate the same set of tacos that she had last fall. And, then she filed a glowing report the following day both on her blog and on her Yelp profile!

Here’s just a portion of what she wrote:

Their attention to their ingredients then was great to see and the food delicious. I managed to catch up with the food truck at the past Santa Ana Art Walk and was very happy to see them there.

So to refresh my memory, I got one of every kind offered except their pollo. I had the carne asada, camarones (shrimp), and the vegetarian which I had never had before. It was written on the chalkboard menu that it was a Yelp favorite so I was excited to give it a shot. Uh, excellent! The shrimp was just as succulent and flavorful as I had remembered it being. The carne asada had a whole bunch of delicious, meaty flavor. The veggie was very interesting as it was mainly roasted vegetables that were heavy on mushrooms (I love mushrooms!)
