Happy TGIF!  The beautiful weather here for the next few days in Southern California couldn’t be more ideal.  In honor of the return of mid-70’s temperatures, let us spotlight for you one of our more milder salsas.

Easily one of the most popular ones that we serve both on our gourmet food truck and our taco catering carts is the moderately spiced roasted red tomato salsa (or “salsa roja”).  Although, it packs about three different kinds of chiles, it isn’t too hot nor too cold.  It’s just right!

We start out by roasting whole tomatoes until their flavors intensify and on the skin forms a wonderful layer of char.  Then, we blend it all together with our secret blend of garlic, herbs and spices.

What results is a versatile condiment that goes perfectly over any of our grilled tacos or even sprinkled over our freshly made tortilla chips.
