Happy TGIF! You made it, the week is coming to a close and it’s time to celebrate. Hopefully these past few days were as delectable as ours.

Last night we had the great pleasure of hosting another mouth-watering Tasting Night at SOHO TACO world headquarters and we had a blast! If you’ve never been to one yet, it’s a wonderful opportunity to try out our fantastic cuisine and world class service.

Potential and existing clients get to sample many our refreshing aguas frescas, tantalizing tacos and a plethora of fabulous appetizers.

And, one of the appetizers that we had the great pleasure of making its debut last night was our Sopesito de Mole de Pollo and, yes, it’s quite the mouthful.

This wonderful, satisfying hand-held treat features succulent chicken coated in our housemade mole, which is then stuffed into our freshmade mini sopes.

What’s a sope? A sope, also known as picadita (in Tierra Caliente, Guerrerro) is a traditional Mexican dish originating in the central and southern parts of Mexico, where it was sometimes first known as pellizcadas. It is an antojito which at first sight looks like an unusually thick tortilla. The base is made from a circle of fried masa (ground maize soaked in lime, also used as the basis for tamales and tortillas) with pinched sides. (Source: Wikipedia)

Our version of the sope is a smaller, bite sized disk that’s shaped not unlike a little mini bowl. It’s flavor is a wonderful rich corn that complements the savory ingredients stuffed inside.

We make these little handy-dandy, edible carrying cases ourselves in our own kitchen with lots of love and care. So, that way you get a soft, pillowy base that’s unlike any other you may have had.

For yesterday’s tasting night we made several dozen of these tasty treats and they were all gobbled up in an instant, and it’s easy to see why. They’re definitely as gorgeous as they are tasty. Hopefully everyone who paid us a visit last night enjoyed it as much as we did serving it!
