The outdoor area, adorned with cascading greenery and vibrant flowers, held an air of tranquil elegance, perfect for the initial ceremony and the main taco catering. There was also a kitchen outside hidden by tall beautiful bamboo where we prepared the appetizers.

Indoors, the space transformed into a vibrant hub for celebration, where laughter and music mingled with the anticipation of the culinary journey to come.

A Culinary Tapestry

My first act involved a tantalizing spread of appetizers, laid out on a buffet table like a vibrant tapestry. Quesadillas, their golden shells crisped to perfection, held warm pockets of cheese and savory fillings. Spadas de fruta, jewels of colorful watermelon and and mango topped with chamoy and tajin, offered a refreshing counterpoint. Esquites, tender corn kernels bathed in a creamy and flavorful sauce with cotija cheese and chamoy, added a touch of rustic charm. And finally, the tostaditas de chorizo, small tortillas topped with guacamole, spicy chorizo and jack cheese, provided a burst of bold flavor.

As guests mingled, enjoying the diverse selection, I observed their delight. Laughter erupted over shared bites, and compliments danced on the air. Witnessing this initial wave of pleasure fueled my own passion, a silent promise to take the culinary experience to even greater heights.

A Variety of Tacos

The transition to taco service was seamless, marking the start of the second act. We moved the taco cart to where the ceremony took place and started making the main course. We set up a condiment table where we had placed the appetizers earlier in the day, the condiments were cilantro, onions, limes, cheese, heirloom tomato pico de gallo, mango salsa, guacamole, red roasted tomato salsa, and jalapeño salsa.

Carne asada, the undisputed king of tacos, arrived sizzling on platters, its smoky aroma a siren call to hungry souls. Pollo asado, its marinated chicken boasting a complex blend of spices, offered a tender and flavorful alternative. But the true stars of the show were the unexpected heroes: the mahi-mahi and shrimp tacos.

Their fresh, ocean-kissed flavors, perfectly balanced with tangy salsas and creamy guacamole, elicited murmurs of surprise and delight. The Mahi Mahi tacos are grilled to perfection, placed on a soft pillowy corn tortilla and topped off with cabbage and chipotle sour cream. The shrimp taco is similar but we melt the cheese on the tortillas then add the shrimp, cabbage, and chipotle sour cream. Both the mahi mahi and the shrimp tacos pair excellent with mango salsa.

Throughout the three-hour service, I, along with my team, became invisible maestros, ensuring the flow of food remained constant. We replenished the appetizer table, kept the taco platters coming, and maintained a sense of calm amidst the celebratory buzz. It was a dance we knew well, each movement precise and efficient, yet infused with a passion for creating culinary memories.

As the event drew to a close, the satisfaction on the faces of my clients was the sweetest reward. The empty platters and the chorus of “best tacos ever!” whispered a story of success.
