The search for our April food truck special continues!

What you’re looking at is SoHo Taco’s choriqueso taco on a fresh handmade tortilla, another savory delight we’re hoping to introduce on the truck for our next monthly special.

It consists of a traditional Mexican chorizo tossed together with creamy jack cheese.  Next they’re grilled to smokey perfection and then topped off with sauteed potato scallops.

Chef Gabe prepared a couple of these for the executive team the other day and we simply fell in love with the robust flavors and hopefully you will, too.

If you recall, last week we mentioned that we were also experimenting with seafood tacos on freshly made blue corn tortillas.  If you’re dying to try those, don’t worry!  One or more of those are still in the running for next month’s special as well!

Meanwhile, we’re still doing a little tinkering here and there.  Once we’ve decided on the best of the best, we’ll be sure to make an announcement soon.

Nevertheless, you can be assured whichever handheld creation we present next month will be up to our SoHo Taco standards and hopefully one you’ll not soon forget.
