1. The Edge of the Tortilla is All Sorts Of Wonky & Jagged Simply looking at a photo (like the one on the left) you can instantly tell it’s handmade and not from a bag if the edges tend to be a bit jagged and wonky. When the masa goes on the press, it spreads out in any old way it wants. If it’s perfectly circular, then it was most likely made by a machine. 2. The Masa Is Made From Scratch, Not Store Bought The next time you order a taco served on a handmade tortilla, ask where they got the masa. Hands down (pun fully intended) the best type is made from scratch. At SoHo Taco, we use our own secret recipe that cannot be found on any store shelf nor pre-made at your local Latin grocery store. The Tortilla Was Made About 10 to 15 Minutes Ago One of the heartbreaking things we experience on the truck is when someone asks for their tacos to go. We understand that folks are in a hurry and can’t stick around too long. But, handmade tortillas have a “window of greatness” which is about 10 to 15 minutes. After that time frame, the tortillas go from “great” to “pretty good”. So, the best time to have a taco is the moment you have it in your hand. 4. You Have A Skilled Tortilla Maker Grilling Up the Tortillas Both on our gourmet food truck and on our taco catering carts, our super-skilled tortilla makers only have one task: make the tortillas. Unless things get super, duper busy they rarely do any of the taco assembly, calling of names or working the register. Making a tortilla by hand requires constant supervision from beginning to end, it’s pretty intense. 5. The Tortillas Are Made By SoHo Taco Sorry for the obvious product placement, but it’s true! Our standards are such that if the tortillas are too dry, they aren’t cooperating on the grill, they don’t taste the way they should, then we simply won’t serve them. It is through our rigorous training and utmost care that we can ensure the very best tortilla goes out every time. Fortunately, the girls we have on staff are so good at adapting to various surroundings and climates, they know how to bring out the very best tortillas in almost any challenging situation.
