This past Saturday, SOHO Taco had the pleasure of catering a stunning wedding at the Cree Estate in Cathedral City. The venue itself was a breathtaking oasis, boasting a sprawling field of emerald green grass and mature trees that provided a picturesque backdrop for the celebration. With roughly 150 guests in attendance, our team, alongside my partners Martin and Alex, set out to create a memorable culinary experience that complemented the beauty of the surroundings.

Tacos on Handmade Tortillas

The heart of our menu revolved around a selection of delectable tacos. We offered a quartet of options, each bursting with fresh ingredients and bold flavors.

  • Carne Asada– Thinly sliced, marinated skirt steak cooked to tender perfection.
  • Pollo Asado– Marinated and flame-grilled chicken, offering a juicy and flavorful alternative.
  • Spicy Potato Tacos– A vegetarian option that packed a punch. Tender potatoes were seasoned with a blend of spices, creating a delightful contrast with the cool toppings.
  • Mahi-Mahi Tacos– Fresh, pan-seared mahi-mahi provided a touch of elegance, showcasing the quality of our ingredients. Topped off with fresh cabbage and chipotle sourcream.

Each taco was presented on a warm, handmade tortilla crafted by Alex throughout the evening. The sight and aroma of these freshly made tortillas added an element of authenticity and artistry to the experience. Guests could customize their tacos with a variety of toppings and sides, creating a personalized flavor profile for each bite.

  • Decadent Indulgences-Jack cheese provided a creamy counterpoint to the savory fillings, while heirloom pico de gallo and mango salsa delivered bursts of vibrant flavor. Guacamole, spicy green salsa, and mild red salsa catered to a range of palates, offering heat levels from subtle to fiery.

  • Rebanadas de Tomate Heirloom– Sweet heirloom tomatoes and peppery microgreens on a lightly buttered baguette offered a sophisticated and elegant bite.

The variety of appetizers ensured that there was something to pique everyone’s interest, setting the stage for the main course of delectable tacos.

Aguas Frescas

To complement the flavorful food and the warm desert climate, we offered a trio of refreshing aguas frescas.

  • Aguas Mango Basil Lemonade– A vibrant and flavorful blend of sweet mango, fragrant basil, and tangy lemonade, offering a perfect balance of sweet and tart.

These homemade drinks were the perfect accompaniment to the spicy and savory flavors of the tacos, cleansing the palate and offering a touch of cool hydration.
